TV Morning Show 4/27/07

Steak Marengo

 

2 tablespoons butter

1 cup chopped onion

½ cup white wine

2 cups sliced mushrooms

2 cloves minced garlic

3 tablespoons tomato puree

½ teaspoon fresh minced thyme

½ teaspoon fresh chopped parsley

salt and pepper to taste

2 ten-ounce New York strip steaks, grilled to desired temperature

fresh thyme sprigs, for garnish

 

In a medium saucepan, cook butter and onion over medium high heat until onions begin to wilt. Add wine, mushrooms, garlic, tomato puree, thyme, parsley, salt and pepper, and simmer for 20 to 30 minutes. Serve over steaks, garnishing with sprigs of fresh thyme.
