Irish Apple Cake
½ stick
butter
1 cup
sugar
1 egg,
beaten

apples, peeled, cored and diced
¼ cup
chopped walnuts
1
teaspoon vanilla
½
teaspoon baking powder
½
teaspoon baking soda
½
teaspoon salt
½
teaspoon cinnamon
½
teaspoon nutmeg
1 cup
all purpose flour
Preheat oven
to 350 degrees. Grease a 10” X 13” baking pan. In a large mixing bowl, cream
butter and sugar together. Add eggs, apples, nuts and vanilla and mix well.
Stir in the dry ingredients and mix well. Pour batter into prepared pan and
bake 45 minutes. Cake should be golden brown. Serve warm with scoops of
vanilla ice cream.
