Irish Onion & Stout Soup

tablespoons butter
3
yellow onions, sliced thin
1 red
onion, sliced thin
3 leeks
(white part only) sliced thin
2 large
shallots, minced
2
cloves garlic, minced
1
teaspoon dried thyme leaves
2 bay
leaves
2
tablespoons brown sugar
1
twelve-ounce bottle Guinness stout
3
fourteen-ounce cans IGA beef broth
salt
and pepper
croutons and minced scallions to garnish
Place first eight
ingredients in a 12-quart stock pot. Cook on medium high until onions are
wilted. Add the next four ingredients and simmer for one hour. Garnish with
croutons and minced scallion.
