Cajun Chili with Fritos

 

2 cups beef broth

1 cup diced onion

1 cup diced celery

1 cup diced green bell pepper

2 teaspoons salt

2 teaspoons dried oregano leaves

2 teaspoons ground cumin

1 tablespoon chili powder

2 cloves garlic, minced

1 teaspoon crushed red pepper

1 small can (6 ounces) tomato paste

2 fourteen-ounce cans diced tomatoes, juice and all

2 fourteen-ounce cans red kidney beans, drained

2 pounds ground beef, cooked, drained and crumbled

½ pound smoked sausage, diced

12 one-ounce bags Fritos corn chips

sour cream and cheddar cheese to garnish

 

Combine first 10 ingredients in a 12-quart stock pot, bringing to a boil on medium heat. Turn heat to low and add the next five ingredients. Simmer for one hour, stirring every 10 minutes. Open the Frito bags and ladle equal amounts of chili into each bag. Garnish with sour cream and cheddar cheese. Enjoy!
