Breast of Chicken Café Du Paris

 

4 six-ounce skinless, boneless chicken breasts pounded to ˝-inch thickness

2 tablespoons olive oil

2 tablespoons Dijon mustard

2 cloves garlic, minced

juice of half a lemon

1 large tomato, diced fine

1 medium onion, diced fine

1 teaspoon fresh chopped thyme

1 teaspoon fresh chopped parsley

˝ cup grated parmesan cheese

˝ cup unseasoned bread crumbs

 

Mix together the olive oil, mustard, garlic, lemon juice, tomato, onion and thyme. In a gallon-sized Ziploc bag, add this mustard mixture and the chicken, seal the bag, and marinate overnight.

 

Place chicken and mustard marinade in a shallow baking pan. Mix together the parsley, cheese and bread crumbs, and spoon over the chicken. Bake at 350 degrees for 30 minutes or until chicken is cooked through. Serve with steamed mushrooms and asparagus.
