Fat Free Crab Cakes with Sauce Remoulade
1 six-ounce package crabmeat, shredded
½ cup
bread crumbs

tablespoons minced scallion
2
tablespoons minced red bell pepper
2
tablespoons fat free mayonnaise
½
teaspoon Old Bay seasoning
½
teaspoon ground mustard
zest of
half a lemon
1 egg
white
1 dash
of hot sauce
Combine all of the above
ingredients in a large mixing bowl. Divide into four large patties. Spray a
nonstick pan with fat free cooking spray, and, on medium heat, brown patties
on both sides, about three to four minutes on each side. Serve with fat free
sauce remoulade, made as follows.
Fat Free Remoulade
¼ cup
plain yogurt
2
tablespoons fat free mayonnaise
2
tablespoons minced dill pickle
1
teaspoon Dijon mustard
1
teaspoon ketchup
1
teaspoon prepared horseradish
1
teaspoon fresh chopped parsley
Combine all of the above
ingredients in a medium mixing bowl. Cover and chill for one hour. Serve
with crab cakes, shrimp cocktail or fish fry.
