Singapore Noodles

tablespoons butter
2
tablespoons vegetable oil
2 cups
finely diced mixed vegetables (onions, carrots, celery and bell peppers)
1
tablespoon curry powder
1 clove
garlic, minced
1
teaspoon fresh grated ginger root
1 cup
chicken broth
½ cup
puréed butternut squash
1 cup
turkey gravy
½ pound
(approximately 2 cups) cooked turkey meat
½ pound
cooked fettuccine pasta
minced
green onion for garnish
Add the first three
ingredients to a wok on medium heat. Cook until the onion begins to wilt.
Add the next three ingredients and cook for one minute. Add the chicken
broth and bring to a boil. Add the next three ingredients, mix well, and
simmer for five minutes. Add the pasta and stir till coated. Serve in pasta
bowls, garnishing with the minced green onion.
