Nellie Little’s Bread Stuffing
1 pound
bulk ground pork sausage, cooked, drained and crumbled

tablespoons butter
4
stalks celery, diced
2
medium onions, diced
1
carrot, diced
2
apples, peeled, cored and diced
1
tablespoon poultry seasoning
2 eggs,
beaten
1˝ cups
chicken broth
2
one-pound loaves bread, cut into cubes
Prepare the sausage and
set aside. Melt butter in a four-quart pan and add the onion, celery and
carrot. Sauté on medium heat until onion wilts. Remove from heat and place
in a large mixing bowl. Add the sausage and all the remaining ingredients to
the bowl and mix well. Stuffing should be moist but not mushy. Place in a
greased baking dish and bake at 350 degrees for 45 minutes.
