Pumpkin Alfredo with Smoked Sausage and Pierogies
2 tablespoons butter
½ cup diced onion
½ cup diced celery
2 cloves garlic, minced
1 cup diced smoked sausage
½ cup pumpkin puree
2 cups heavy cream
¼ cup shredded asiago
cheese
¼ cup grated parmesan
cheese
8 potato and cheese
stuffed pierogies, cooked and kept warm
chopped fresh parsley, for
garnish
In a four-quart saucepan,
add the first three ingredients. On medium high heat, sauté until onion
begins to wilt. Add the garlic and sausage and cook two to three minutes.
Add the pumpkin and stir until blended with the other ingredients. Add the
cream and both cheeses. Continue to cook until sauce is thick enough to coat
the back of a spoon. Serve sauce over warm pierogies and garnish with
chopped fresh parsley.
