Steak au Poivre
4 ten-ounce New York Strip
steaks
4 tablespoons cracked
black pepper
2 tablespoons butter
½ cup chopped, peeled and
cored Granny Smith apples
2 tablespoons scallions
(white part only)
4 tablespoons brandy
4 tablespoons crumbled
blue cheese
½ cup heavy cream
¼ cup beef gravy
salt and pepper to taste
Roll steaks in the pepper.
Heat pan on medium-high heat and add the butter and steaks. Cook four to
five minutes each side for rare. Remove to serving plates. Add the apples,
scallions and brandy to the pan. Flambé and add the remaining ingredients.
Bring to a boil, turn off heat, spoon sauce over steaks and serve with baked
or fried potatoes.
