TV 7 Morning Show 8/4/2006

“FETTUCINE FRATTORIA”

 

2 TBLSP. Extra Virgin Olive Oil

2 TBLSP. Butter

1 Cup Diced Onion

1 Cup Diced Celery

1 Cup Diced Green Bell Pepper

1 Cup Diced Yellow Squash

1 Cup Diced Zucchini Squash

2 Cups Diced Fresh Tomatoes

2 Cups White Cooked Navy Beans

1 Cup Diced Lean Ham

1 Cup Diced Cooked Crisp Bacon

1 Cup chicken Stock

1LB Cooked Fettuccine Pasta

Grated Parmesan Cheese and Fresh Chopped Parsley for garnish

 

Add the first seven ingredients to an 8 quart Stock Pot, and cook over medium heat until the onions begin to wilt.  Add the next five ingredients and cook for 5 – 6 minutes as sauce begins to thicken.  Divide the Pasta into four portions, pour equal amounts over pasta and garnish with the Parmesan Cheese and Parsley.
