“Sweet and Spicy Cherry Salsa”

 

1 Cup Red Onion Diced Fine

1 Cup Green Bell Pepper Diced Fine

1 Cup Fresh Pineapple Diced Fine

1 ½ Cups Fresh Cherries Pitted and Diced Fine

1 Med. Size Jalepeno Pepper, Seeded, Ribs Removed and Minced

Juice of One Lemon or Lime

Pinch Ground Ginger

Pinch Ground Cinnamon

Salt and Pepper to Taste

 

 

Combine all of the ingredients in a 2 qt. mixing bowl.  Stir to blend, making sure Jalepeno gets evenly distributed.  Cover and refrigerate for at least one hour.  Serve with grilled pork, chicken or fish.
