“Honey Lime Pork with Red Pepper Pesto”

 

6 – 6oz. Pork Chops – Boneless

3 Tblsp. Honey

3 Tblsp. Soy Sauce

Juice of one Lime

1 Tblsp. Ground Black Pepper

1 Tblsp. Brown Sugar

 

Place the chops in a Ziploc, (gal. size) bag.  Mix the rest of the ingredients together and pour over chops.  Marinate overnight and grill to desired temperature.

 

 

“Red Pepper Pesto”

 

1 Cup Diced Red Bell Pepper

2 Scallions Diced

2 Cloves Garlic

¼ Cup Grated Parmesan Cheese

¼ Cup Pine Nuts, Walnuts, or Almonds

5 – 6 Tblsp. Extra Virgin Olive Oil

Salt and Pepper to taste

 

Place the first five ingredients in a food processor and add two tblsp. of the olive oil.  Process until a smooth paste begins to form.  Add the remaining oil season with salt and pepper and process until smooth.  Serve with grilled meats, fish or tossed with hot pasta.
