Grampa John’s Potato Salad
From the TV7 Morning Show June 2, 2006
12 – “B” size
Red Bliss Potatoes (steamed, chilled and chopped)
12 hard
boiled egss (peeled and chopped)
2 cups
mayonnaise
2 tbsp.
minced Spanish olives
2 tbsp. salad
mustard
1 stalk
celery, minced
1 clove of
garlic, minced
Salt and
pepper to taste
Combine all
of the ingredients in a large mixing bowl and mix well. Chill for at least
two hours and serve. If preparing a day ahead, you may have to add more
mayo the next day. Sliced eggs, diced bacon and ham make a great garnish.
Salad Tonato
From the TV7 Morning Show June 2, 2006
1-6 oz. can
of tuna (packed in water – reserve half of the liquid)
2 cups
mayonnaise
1 tsp. capers
(minced)
2 cloves of
garlic (minced)
1 tsp.
balsamic vinegar
1 tbsp. Dijon
mustard
Juice of half
a lemon & lime
¼ cup grated
parmesan cheese
¼ cup heavy
cream
Combine all of the
ingredients in a blender or food processor and mix well. Let chill for at
least one hour before using. Use this dressing like you would ceasar
dressing. Toss with greens and garnish with croutons, olives, shrimp,
chicken, or chilled Italian sausage.
