Mexican Chicken Marinade

From the TV7 Morning Show - May 5, 2006

 

10 cloves garlic, minced

2 tbsp. fresh chopped cilantro

2 tbsp. ground cumin

1 tsp. ground cloves

1 tsp. ground cinnamon

1 qt. pineapple juice

2 cups sherry wine

2 cups cider vinegar

2 cups hot sauce

2 onions, finely diced

1 grapefruit, halved and sliced

1 lemon or lime, sliced

1 orange, halved or sliced

 

Mix together the first six ingredients.  Add the remaining ingredients and stir until blended.  Let the marinade sit for one hour.  Pour over 12 pieces of split broiler chickens or two whole pork loins.  Let marinade for two days.
