TV 7 Morning Show 4/14/2006

“Shrimp Czarina”

 

1 Tblsp. Olive Oil

1 Tblsp. Butter

1 Cup of sliced Onion

½ Cup Julienne Carrots

½ Cup Julienne Celery

½ Cup Julienne Bell Pepper

½ Cup Julienne Zucchini

1 Pound 21 -25 count peeled and divined Shrimp

1 Clove of Garlic minced

½ Cup Fresh Basil leaves cut into stripes

¼ cup Champagne

2/3 Cup Heavy Cream

 

In a 16 inch Sauté Pan, on medium heat, add the first seven ingredients.  Sauté until onions are limp.  Add the next three ingredients and cook until shrimp are pink and cooked through.  Add the next three ingredients and cook until sauce is thick enough to coat the back of a spoon serve over pasta or rice.
