Yogurt Marinated Shrimp

TV 7 Morning Show February 10, 2006

 

2 cups of plain yogurt

Juice of two limes

1 tsp. salt

1 tsp. ground black pepper

4 cloves of garlic, minced

4 scallions, minced

1 tsp. ground cumin

1/4 cup fresh chopped cilantro

12 “seapack” skewered shrimp

 

Combine the first 8 ingredients, and mix well. Spoon over skewered shrimp and marinate for at least four hours.  Grill the skewers until shrimp is pink and cooked through.  Serve over rice with a wedge of lime on the side.
