Hungarian Ragout

 From the TV Morning Show - January 13, 2006

 

2 tbsp. olive oil

1 cup diced onion

1 cup diced celery

1 cup diced red bell pepper

1 cup diced green bell pepper

1 cup sliced mushrooms

4 cloves garlic, minced

1 lb. diced cooked beef

1 lb. diced cooked ham

4 tbsp. Hungarian Paprika

3 cups chicken stock

2 cups sour cream

1 lb. cooked fettuccini

  

Add the first six ingredients into an 8 qt. stock pot and sauté for 5-6 minutes on medium heat.  Add the next four ingredients and sauté for another 10-12 minutes, stirring often.  Add the chicken stock and bring to a boil.  Add the sour cream and mix well.  Allow to simmer for 5-6 minutes and serve over fettuccini.
