Kwanzaa Chicken

TV 7 Morning Show-December 23, 2005 

1 qt. chicken stock

2 cloves garlic minced

1 tsp. salt

1 tsp. pepper

1 tsp. ground cumin

½ tsp. ground cinnamon

½ tsp. crushed red pepper

1 cup onion diced

2 cups parsnips diced

2 cups sweet potatoes diced

1 lb. raw skinless boneless chicken breast diced fine

juice of one lemon

juice of one orange

minced scallion to garnish

 

In an eight quart stock pot, bring the first ten ingredients to a boil.  Allow to boil for 15 minutes.  Add the chicken and juices and turn heat to simmer.  Simmer for 45 minutes and serve with scallion to garnish.
