Irish Christmas Bread
TV 7 Morning Show-December 9, 2005
2 cups all purpose flour
1 ½ tsp. baking powder
1 tsp. baking soda
3 tblsp. sugar
½ tsp. ground cinnamon
½ tsp. salt
2 tblsp. butter-room temperature
1 cup buttermilk
1 cup diced, dried, mixed fruit
Sift the first six
ingredients into a mixing bowl. Add the butter and cut into flour mixture.
Add the buttermilk and fruit. Form into a ball, dough should be quite moist
and sticky. Work into a 6-8 inch disc and place into a pie tin or baking
pan. Cut a ½ inch cross on the top of the bread, this will allow it to
rise. Bake at 325 degrees for one hour.
