Thai Marinated Cornish Game
Hens
TV 7 Morning Show-October 28, 2005
¼ cup soy sauce
¼ cup teriyaki sauce
¼ cup fish sauce
¼ cup chopped cilantro
juice of 1 lime
1 tsp. minced fresh garlic
1 tsp. minced fresh ginger root
1 tsp. red chili pepper paste
2-1 ½ lb Cornish game hens cut in half
½ cup plum sauce
½ cup orange marmalade
1 tblsp. hot sauce
Combine the first eight
ingredients into a food processor and mix until smooth. Place the hens in a
gallon zip lock bag. Divide the marinade in half and pour into each bag.
Marinate hens over night and grill on each side for 15 minutes on medium
heat. Grilling the hens is similar to grilling chicken the leg bone will
pull away from the body quite easily when done and the juices of the bird
will run clear. Mix the plum sauce, marmalade and hot sauce together and
serve as a dipping sauce.
