Roast Pork Fajitas with Apple Walnut Salsa
TV 7 Morning Show-September 16, 2005

For the salsa;
3 med apples cored and diced fine
(granny smith apples are best)
3 med tomatoes diced fine
1 med cucumber peeled and diced
1 cup diced red onion
1 cup chopped walnuts
2 small jalapenos seeded and diced fine
2 tblsp. fresh chopped cilantro
juice of one lime
3 tblsp. olive oil
salt and pepper to taste

Combine all of the ingredients in a medium mixing bowl and chill for one hour.

For the fajitas;
2 med green bell peppers cut into strips
2 med red bell peppers cut into strips
2lbs. roast pork cut into thin strips
1tblsp. olive oil
2tblsp. fajita seasoning
8-12” flour tortillas
2 cups sour cream

In a medium size mixing bowl add together the peppers, pork, oil and seasoning and toss to coat evenly. Heat a large skillet on medium to high heat and add the pepper mixture. Braise until the peppers and pork begin to brown and remove from heat. Add one tablespoon sour cream to the center of each tortilla. Add two tablespoons of salsa and 1/8 of the pork mixture. Fold the right side of the tortilla toward the center, and roll the rest of the way leaving one end open. Repeat until all the tortillas are used. Serve with remaining sour cream and salsa.
