Sauce Nicoice
TV 7 Morning Show - August 26, 2005

2 tblsps. butter
½ cup diced onions
½ cup diced celery
½ cup diced red bell pepper
½ cup diced tomatoes
½ cup ripe olives
2 cloves garlic minced
1-6oz. can artichoke hearts quartered and drained
½ cup white wine
4 tblsps. Condensed beef consommé
1tsp. balsamic vinegar

In an eight quart sauce pan melt the butter on medium heat. Add the onions, celery and pepper. Sauté until the onions begin to brown. Add the tomato, garlic, olives, artichoke hearts, wine, consommé and vinegar. Simmer for 5-10 minutes on low heat. Serve sauce over sirloin steak, chicken or pasta.
