Mexican Lime and Mustard Dressing/Marinade
TV 7 Morning Show - May 20, 2005
Juice of one lime
1 tbsp. honey
1 tbsp. fresh chopped cilantro
1 tsp. salt
1 tsp. crushed red pepper
1 clove of garlic, minced
2 tsp. minced scallion
1 tsp. chili powder
½ cup dijion mustard
½ cup mayonnaise
4 – 10 oz. NY Strip steaks or 4 – 8oz. skinless, boneless
chicken breasts
Combine the first ten ingredients in a food processor and blend well.
Pour over steaks or chicken, coating both sides evenly. Marinade overnight
and grill to desired temperature. Makes a great dressing for tomato-cucumber
salad.
