Angel Food Cake
with Fresh Fruit and Coconut
TV7 “Manning the Kitchen” Easter Program

Juice of 2 lemons
1 cup Confectioners Sugar
2 cups diced cantelope or mangoes
1 cup red seedless grapes
1 cup sliced strawberries or whole raspberries
1 banana, sliced
1 – 8” angel food cake, cut into 1” slices
2 cups of whipped, sweetened cream
¼ cup grated coconut

Combine the lemon juice and sugar, mix well. Add the fruit together and pour the sugar mixture over the top. Stir to coat the fruit. Place a piece of cake onto a 6” round plate and add about a half of a cup of the fruit mixture on top of the cake. Top with whipped cream and coconut. Yields 8 servings.
