Seafood Fra Diavlo with Fettuccine
TV 7 Morning Show — February 18, 2005


2 TBLSP. olive oil
2 TBLSP. Butter
1 med. Onion diced
1 med. Red bell pepper diced
1 med. Green bell pepper diced
2 cloves garlic minced
1 tsp. Italian seasoning
1lb. raw peeled and deveined shrimp (21-25)
1lb. skinless boneless Haddock cut into 2in pieces
3-6oz. cans chopped clams and their sauce
2 med tomatoes diced
½ head of romaine lettuce cut into strips
½ tsp. cayenne pepper
½ cup grated parmesan cheese
½ cup shredded provolone cheese
1lb. cooked “Morgia’s” fettuccine

In a 12 quart pot add the first five ingredients and sauté on medium heat. When the onion begins to wilt add the garlic, seasoning, shrimp and haddock. Cook until shrimp are pink and fish begins to flake, about four minutes. Add the tomatoes, clams and cayenne pepper. Bring to a boil and add fettuccine. Simmer four more minutes and add romaine and cheeses. Toss to wilt greens and serve in four pasta bowls.
