Tuscan Bean and Bacon Pasta Sauce
TV 7 Morning Show — January 7, 2005


1 tbsp. Olive oil
1 tbsp. butter
½ cup diced onion
½ cup diced red bell pepper
½ cup green bell pepper
1 cup zucchini
1 cup fresh mushrooms
1 cup fresh tomato
1 clove garlic, minced
1 lb. Cooked & diced bacon
1 ½ cups cooked navy beans
2 cups beef or pork stew
2 tbsp. flour
1 lb. Cooked spaghetti or linguini
1 cup grated parmesan

In a 8qt. pot, place the first seven ingredients in the pot, and cook over low heat. When the onion begins to wilt, add the flour and cook for 15 minutes, stirring every two to three minutes. Add the tomato stock, bacon and bean. Bring the stock to a low boil and add the garlic and half of the parmesan cheese. Cook the sauce for another 4-5 minutes and serve over pasta. Top with the remaining cheese.
